Citrus Gazpacho
- 4 medium tomatoes, seeded and coarsely chopped
- 1 cup seeded and coarsely chopped cucumber
- 1 cup coarsely chopped yellow bell pepper
- 1 jalapeno, seeded and coarsely chopped
- 1/3 cup thinly sliced green onion
- 2 tablespoons chopped Italian parsley
- 1 cup low sodium tomato juice
- 3 tablespoons balsamic vinegar
- 2 tablespoons fresh-squeezed Sunkist® lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 3 Sunkist Tangerines, washed, peeled and cut into ½-inch pieces segments
- 12 Sunkist tangerine segments and parsley sprigs for garnish
Makes 4 servings.
In a food processor combine tomato, cucumber, bell pepper and jalapeno. Pulse until mixture is chopped. Pour into a large bowl. Add green onion and parsley. In small bowl combine tomato juice, vinegar, lemon juice, oil and Worcestershire sauce. Pour into tomato mixture. Stir in tangerine pieces.
Serve in soup bowls. Garnish each bowl with 3 tangerine segments and a sprig of parsley.
