Fresh Tangerine Confetti Salsa
- 1 tablespoon freshly squeezed Sunkist® tangerine juice
- 1 cup Sunkist fresh tangerine segments, diced
- ½ cup whole corn kernels, canned, drained
- 1/3 cup black beans, canned, rinsed and drained
- ¼ cup red bell peppers, diced
- ¼ cup green bell peppers, diced
- pinch of salt
- ½ teaspoon black pepper
Makes approximately 2 Cups.
Combine freshly squeezed tangerine juice, fresh diced tangerine segments, corn, black beans, red and green bell peppers, salt and pepper. Toss gently to blend thoroughly. Cover and refrigerate until ready to serve.
Serving Suggestion: Serve inside a warm fresh corn tortilla with shredded lettuce to make a vegetarian taco.
Serve with grilled chicken.
