- 2 cans (about 7 ounces each) tuna, drained and flaked
- 1 Sunkist® orange -grated peel
- 2 Sunkist® oranges , peeled, cut into bite-size pieces, and drained
- ½ cups mayonnaise or salad dressing
- ¼ cups chopped green onions (scallions)
- 6 (6-inch each) loaves pocket bread, cut in half
- fresh spinach leaves, cut into thin strips

- In a bowl, combine the tuna, orange peel, orange pieces, mayonnaise, and green onions.
- Spoon about 1/4 cup of the tuna mixture in the pocket of each bread half, fill with spinach.
- TANGERINE VARIATION:
- Substitute fresh grated peel of I tangerine and 3 medium tangerines, peeled, segmented, seeded, and cut in half for the orange peel and pieces.
- APPLE VARIATION:
- Omit the orange peel and pieces. Substitute fresh grated peel and juice of 1/2 lemon, 1 can (8 ounces) crushed pineapple, drained, and 1 apple, chopped.
