The delicate taste of artichoke comes through in this Creamy Tomato and Artichoke Gnocchi. No need to add salt, the lemon takes it's place, making this a Sunkist S’alternative™ . An easy delicious meal that is sure to please!
Ingredients:

olive oil

garlic clove

14.5 oz can diced tomatoes, do not drain

jar marinated artichoke hearts, drained and chopped

Tbsp.
Sunkist® lemon juice

Tbsp.
fresh oregano, chopped

Tbsp.
fresh basil, chopped

oz.
cream cheese, softened

16-oz. package gnocchi
Instructions: (Makes 4 servings)

Heat the oil in a sauté pan over medium heat, add garlic cooking until golden. Add tomatoes, artichokes, lemon juice, oregano and basil. Bring to boil and cook for 5 minutes.

Fill a large pan halfway with water and bring to boil, add gnocchi and cook 3 to 4 minutes or until gnocchi floats to the top.

Remove saucepan from stove and stir in cream cheese, return to low heat and simmer fo 5 minutes.

To Serve: Drain gnocchi and transfer to serving plate, top with sauce and enjoy!
