The taste of the curry and the fresh fruit salsa is a delicious combination. Curry scented Roasted Chicken Breasts with Sunkist Grapes, Orange and Feta Salsa is sure to please. Easy to make, healthy and best of all tastes great. It’s chicken with a fruity twist!
Ingredients:

chicken breasts, boneless and skinless

Tbsp.
curry powder

Tbsp.
extra virgin olive oil

1 ½
cups
Sunkist® grapes, washed and halved

Sunkist® navel oranges, peeled and segmented

½
cup
feta cheese, crumbled

½
red onion, sliced
-
¼
cup
basil leaves, thinly sliced

Preparation: Preheat oven to 375 degrees.
Instructions: (Makes 4 servings)

In a medium sized mixing bowl, add the chicken breasts and toss with 2 tbsp. olive oil and curry powder. Place the chicken breasts on a sheet pan and cook for approximately 10 to 15 minutes, or until cooked through.

In a mixing bowl, mix together the grapes, orange segments, onions, feta and basil. Toss with remaining olive oil and season with fresh ground pepper.

Remove the chicken from the oven and allow it to rest, approximately 5 minutes.

To Serve: Slice each breast four times and place each on a serving plate. Divide the salsa amongst the plates and serve.
