Ingredients:

whole star anise*

sugar

strips (about 3 inches each) lemon peel (removed with vegetable parer)

cup
fresh squeezed lemon juice (about 6 Sunkist® lemons)

Sunkist® lemon, cut in cartwheel slices for garnish
Instructions: (Makes 5 servings)

In small non-stick skillet, toast star anise over medium heat, shaking pan to prevent scorching, for 2 to 3 minutes until fragrant and slightly darkened.

In large saucepan, bring 1 cup water, sugar, lemon peel and star anise to boil.

Reduce heat and briskly simmer for 15 minutes.

Add 3 cups additional water and lemon juice; heat.

Remove and discard lemon peel.

Serve in mugs with 1 or 2 lemon slices and a star anise.
*Star anise can be purchased in Oriental markets and some supermarkets.
