A wonderful tasting dish! Gingered Plums and Orange Finale is simple yet so delicious. Easy to make and sure to impress.

Ingredients:

¾ cup diet or regular ginger ale
3 Tbsp. honey
½ tsp. finely chopped crystallized ginger
1 strip Sunkist® fresh orange peel (about 3 x 1 inch)
1 cinnamon stick
1 lb. red plums, quartered and pitted (about 6 large)
3 Sunkist® oranges, peeled, cut in thick half cartwheel slices
Frozen light dairy dessert or soft frozen yogurt

Instructions: (Makes 6 servings)

In large saucepan combine ginger ale, honey, ginger, orange peel and cinnamon. Bring to a boil, reduce heat, simmer uncovered for 5 minutes.

Add plums gently boil for 4 to 6 minutes until plums are just tender. Remove from heat, discard orange peel and cinnamon stick. Reserve one half of the plums.

In food processor or blender process remaining plums and cooking liquid until smooth. Pour into bowl and add reserved plums to pureed mixture, chill.

To Serve: Spoon some sauce onto each of 6 dessert plates. Arrange orange half cartwheel slices over sauce. Spoon remaining sauce and plums over oranges. Top each serving with a very small scoop of frozen dessert.
