Not only is this a delicious chicken recipe, using marinated chicken tenders, it is quick and easy. Lemon-Kissed Chicken Capellini Sauté has the fresh taste of lemon, making this a Sunkist S’alternative™, and Dijon mustard in the marinade. This is sure to be a family favorite!
Ingredients:

fresh chicken breast tenders, cut into bite sized pieces

olive oil

fresh asparagus tips

- 3 pinches red pepper flakes

sun dried tomatoes, julienned and diced

ripe cherry tomatoes, halved

pound dried capellini pasta

cube unsalted butter, melted

Lemon Pepper Marinade:
-
½
cup
Sunkist® lemon juice, freshly squeezed
-

Tbsp.
Sunkist® lemon zest
-

Tbsp.
Dijon mustard
-

tsp.
crushed garlic, divided
-
1
tsp.
dried thyme leaves, divided
-
1
tsp.
dried basil leaves, divided

tsp.
freshly ground black pepper, divided

extra virgin olive oil
Instructions: (Makes 4 servings)

In a medium bowl whisk lemon juice, mustard, 1 tsp. each garlic and black pepper, 1/2 tsp. each thyme and basil then slowly whisk in the olive oil.

Pour 1/2 cup of marinade into a medium sized ziplock bag. Put chicken in bag and place into the refrigerator for two hours. Take the reserved 1/2 cup of marinade and add lemon zest and remainder of the black pepper and set aside.

Heat a large pot of water with 1 Tbsp. olive oil and bring to a boil. Place 2 Tbsp. olive oil in a large skillet on medium high heat.

Remove tenders from marinade with a slotted spoon and place in the heated skillet along with the remaining garlic, asparagus, sun dried tomatoes, red pepper flakes and herbs. Sauté for 3 minutes, stirring as you cook. Stir in cherry tomatoes, cover and set aside.

Add pasta to the boiling water stirring to separate. Cook pasta until al dente (approximately 3 minutes). Melt butter in a one cup glass measuring dish in microwave, cool slightly and stir reserved marinade into melted butter.

Drain pasta and quickly toss with lemon butter mixture, leaving some of the boiling water on the pasta. Reheat the chicken mixture. Using tongs, mix pasta with the chicken mixture, place on serving dishes and enjoy!
