A nice change of pace from the usual pasta fare. This Lemon Pasta with Chicken and Broccoli dish incorporates a classic combination of flavors. Lemon, which is a great Sunkist S’alternative™, chicken, and garlic combine for delicious results!
Ingredients:

oz.
penne pasta

2-3 skinless, boneless chicken breasts

14-16 oz. broccoli

Sunkist® lemons, juiced
-
Zest of 1 Sunkist® lemon

Tbsp.
olive oil
-
3
garlic cloves, chopped
-
Freshly ground black pepper
-
2
Tbsp.
butter
-
½
cup
grated parmesan cheese
Instructions: (Makes 6 servings)

Cook pasta according to package directions. Meanwile, heat olive oil in skillet on medium high heat.

Sprinkle chicken breasts with black pepper. Saute garlic in oil for 30 seconds, place chicken in skillet and brown on both sides.

Cook until chicken is no longer pink inside, about 7 to 10 minutes. Remove chicken from skillet and let rest.

Add broccoli to pasta and continue to cook for 3 minutes. Cut chicken into pieces. Drain pasta and broccoli, add lemon juice, lemon zest, butter and chicken to pasta and stir.

To Serve: Add parmesan cheese and freshly ground black pepper if desired, serve with a lemon wedge.
