This salad is absolutely delicious! Long Life Citrus Noodle Salad is light and refreshing, your family and friends will enjoy this dish.
Ingredients:

Sunkist® grapefruit*, peeled, segmented

Sunkist® navel oranges, peeled, segmented

oz.
dried rice stick noodles

Tbsp.
chopped fresh mint

Tbsp.
chopped fresh cilantro

Tbsp.
chopped roasted, salted peanuts*Use grapefruit, pummelo, or sweeties.

Dressing:

Tbsp.
fresh squeezed orange juice

Tbsp.
fish sauce

Tbsp.
sesame oil

Tbsp.
chili garlic sauce
-

tsp.
honey
-
1
tsp.
seasoned rice vinegar

Salt and freshly ground pepper, to taste
Instructions: (Makes 4 servings)

Bring a large pot of water to a boil over high heat. Add the noodles and cook until tender, about 3 minutes. Drain, rinse with cold water, and drain again. Transfer noodles to a large mixing bowl.

Whisk together the dressing ingredients in a medium bowl until well blended.

Pour the dressing over the noodles. Add the oranges, grapefruit, mint and cilantro and toss until noodles are well dressed. Tranfer noodles to a serving platter and garnish with the peanuts.
