Sumac which adds a depth of flavor to this dish, is a spice made from ground red berries which grow wild all over Lebanon. Lemon is used to replace any salt which makes this a Sunkist S’alternative™ . Luscious Lemony Fattoush is a delicious salad, before serving try letting it sit for a bit to let the pita soak up the lemony dressing!
Ingredients:

chopped parsley, both curly and flat-leaf

large piece whole wheat pita bread, torn into 1 inch pieces and toasted lightly

torn lettuce leaves

small red onion, quartered and thinly sliced

cup
cherry or grape tomatoes, halved

medium cucumbers, halved lenghtwise and thinly sliced

Sunkist® lemon, juiced

cup
extra virgin olive oil

¼
tsp.
freshly ground black pepper

tsp.
ground sumac
-
Pinch of cayenne pepper
Instructions: (Makes 4 servings)

Place parsley, toasted pita, lettuce, onion, tomatoes and cucumber into a large mixing bowl. In a smaller bowl whisk together lemon juice, olive oil, black pepper, sumac and cayenne. Pour over the salad and combine well.
