Somewhat like a popover in texture and taste, the Orange "Puff" Pancake is a large puffed shell that can be filled with any combination of fresh fruit. Also try serving it filled with Dilly Orange Scramble for an extra-special brunch entrée.

Ingredients:

3 eggs
½ cup buttermilk biscuit or pancake mix
½ cup milk
2 Tbsp. butter or margarine
1 Sunkist® orange, grated peel
4 Sunkist® oranges, peeled, cut into bite-size pieces, and drained
1/3 cup light brown sugar
Sour cream
as needed Nutmeg

Instructions: (Makes 4 servings)

Preheat the oven to 425º F. In a bowl, beat the eggs with an electric mixer until foamy. Gradually add the biscuit mix alternately with the milk; beat until smooth.

In a 9-inch glass pie plate or a 9- or 10-inch ovenproof skillet, melt the butter in the preheated oven. Meanwhile, continue beating the egg mixture at high speed for 3 minutes more; stir in orange peel.

Carefully remove hot pie plate from oven; pour in batter. Bake for 17 to 20 minutes, or until pancake is puffed and browned.

Meanwhile, combine orange pieces and brown sugar. Spoon fruit into warm pancake; top with sour cream and sprinkle with nutmeg.
