Most often made with pork in the north it is also prepared with fish or chicken and in this contemporary version with shrimp and Pummelo, if Pummelo is not available substitute grapefruit.

Sunkist Meyer Lemon Limoncello
Limoncello is an Italian lemon liqueur typically served very cold as an after dinner drink. Traditional recipes involve soaking the lemon peels in grain alcohol for 4 to 6 months to extract lemon flavor into the alcohol. This simplified recipe calls for soaking Meyer lemon peels in vodka for 14-21 days. It is very important to use only the yellow peel of the lemon and not the white pith, which is quite bitter. At the end of two to three weeks, the lemon-alcohol mixture is blended with simple syrup, made by dissolving equal parts sugar in water. Commercially available limoncello is 32 to 40% alcohol by volume. This recipe creates a final product that is 23% alcohol by volume, which is still quite strong but very pleasant to sip.
