It would be hard to find an easier-to-make jelly. Other pluses: It's not too sweet, can be made any time of year, and is the perfect "little gift to give"... so keep a few jars on hand.

Ingredients:

  • 3 cups sugar
  • 1 ½ cups apple juice
  • ½ cup freshly squeezed Sunkist® lemon juice
  • 3 oz. liquid fruit pectin

Instructions: (Makes 16 servings)

  • In a large saucepan, combine the sugar, apple juice, and lemon juice. Bring to a full rolling boil over high heat, stirring occasionally.
  • Add pectin. Bring back to a full rolling boil, and boil for 30 seconds, stirring constantly.
  • Skim off the foam. Pour into hot sterilized 1/2 -pint jars, filling to within 3/4 inch of the top.
  • Wipe jars clean; seal. Process in a boiling water bath for 10 minutes.
  • NOTE: A spiral of lemon peel and a stick of cinnamon can be added to each jar before sealing.
  • LEMON PORT JELLY:
  • Substitute 1-1/2 cups of ruby, white, or tawny port for the apple juice. A perfect complement to roasted meat and poultry ... and equally good spread on biscuits or popovers.
