This Acorn Squash dish is easy to make and satisfying to eat. It is a perfect accompaniment for a number of poultry dishes!

Ingredients:

  • 2 medium acorn squash
  • 2 Sunkist® oranges, peeled, sectioned
  • 3 Tbsp. margarine or butter
  • 3 Tbsp. maple syrup
  • ¼ tsp. freshly grated nutmeg
  • to taste salt and pepper

Instructions: (Makes 4 servings)

  • Pierce squash with fork in several places.
  • Bake in 375 degree F oven for 1 to 1-1/2 hours, or until easy to prick with a fork.
  • Cut squash in half lengthwise; remove seeds.
  • Place in baking dish, cut-side up.
  • Place orange sections in hollow of squash.
  • Drizzle with melted butter and syrup.
  • Grate nutmeg over each squash half, season with salt and pepper.
