Using fresh Sunkist oranges, Asian Peanut and Orange Pasta is delicious! The use of fresh citrus adds a flavorful zing to your meals. Top with grilled chicken and this makes a delicious main dish!

Ingredients:

  • 2/3 cup Juice of Sunkist® oranges (2/3 cup per 2 oranges)
  • 1/3 cup creamy peanut butter at room temperature
  • 2 Tbsp. light soy sauce (50% less sodium)
  • 1 tsp. sugar
  • 1 tsp. finely minced fresh ginger
  • 1 small clove garlic, minced
  • 1/8 tsp. crushed red pepper
  • 12 oz. dried linguine, broken in half
  • 2 tsp. sesame oil
  • 1 cup packaged shredded carrots (3 ounces per cup)
  • 1 carrot cut into match stick-size pieces
  • ½ cup diced sweet red bell pepper
  • 1 Sunkist® orange, peeled and cut into small bit-size pieces
  • 2 oz. snow peas, trimmed, blanched* 1 minute and cut into thin strips
  • 3 green onions, thinly sliced diagonally
  • ¼ cup coarsely chopped cilantro

Instructions: (Makes 8 servings)

  • Call it a salad or call it a pasta dish... But serve it at room temperature to enjoy all the flavors
  • In small bowl stir orange juice into peanut butter; beat until smooth
  • tir in soy sauce, sugar, ginger and crushed red pepper
  • Let stand at room temperature for 1 hour or longer to blend flavors
  • Bring 4 quarts of water to a boil and cook pasta according to package directions (8 to 10 minutes)
  • Drain pasta
  • Rinse lightly with cold water and drain well
  • Place in large bowl and toss with sesame oil
  • To serve toss pasta with half of the dressing/sauce
  • Add carrots, red pepper, orange, snow peas, green onions, cilantro and remaining dressing/sauce; toss well
  • Garnish individual servings with additional chopped cilantro, if desired
  • *Place in a sieve and cook along with the pasta; remove and refresh under cold water
  • NOTE: Serve 1 to 1 1/2-cup servings as side-dishes or 2-cup servings, topped with sliced grilled or baked chicken breasts (hot or cold) as main entrees
