Try this delicious recipe with our Lemon Herb Mayonnaise or our egg substitute Lemon Mayonnaise

Ingredients:

  • 8 small baby artichokes, trimmed 1 inch from top, stems trimmed flush, any small leaves removed from bottom, thorny leaf ends removed
  • 2 Tbsp. freshly squeezed Sunkist® lemon juice
  • Extra virgin olive oil, to taste
  • Fresh ground black pepper, to taste

Instructions: (Makes 4 servings)

  • Wash and trim artichokes, brush all cut surfaces with lemon juice.
  • Boil or steam in large pot until tender, 30-40 minutes.
  • Remove with tongs and drain, upside-down, until cool enough to handle.
  • Spread leaves slightly, remove center leaves and spines at the center.
  • Cut in halves and arrange on plates.
  • Drizzle with olive oil and black pepper.
  • Serve with small individual bowls (2 Tbs. each) of lemon mayonnaise.
