Your family and friends will love this dish. BBQ Chicken Strips with Fruit is delicious with the marinade combining grapefruit, heney, soy sauce and ginger to name a few ingredients.

Ingredients:

  • 4 skinless, boneless chicken breast halves (about 1 lb.)
  • 1 medium sweet red or green pepper, cut in 12 squares
  • 1 can pineapple slices (about 8 oz.) in unsweetened juice, cut in half
  • 1 tsp. freshly grated Sunkist® grapefruit zest
  • 1 Sunkist® grapefruit, peeled, segmented
  • 1/3 cup Sunkist® freshly squeezed grapefruit juice
  • 2 Tbsp. salad or vegetable oil
  • 2 Tbsp. honey
  • 1 Tbsp. low sodium soy sauce
  • 1 medium clove garlic, minced
  • 1/4 tsp. ground ginger
  • Hot cooked rice (optional)

Instructions: (Makes 4 servings)

  • Cut each half chicken breast into 3 lengthwise strips. Thread 3 strips accordion fashion on each of 4 long metal or wooden skewers.
  • Parboil pepper for 2 minutes, drain. On 4 additional skewers alternate pepper, pineapple and grapefruit segments. Arrange all skewers in a large shallow pan.
  • Combine grapefruit zest and juice, salad oil, honey, soy sauce, garlic and ginger, pour over skewered chicken and fruit. Marinate 4 hours or overnight, turning occasionally.
  • To barbecue, brush grill lightly with additional salad oil. Remove chicken and fruit skewers from marinade, heat marinade throughly. Cook skewered chicken 4 to 6 inches above glowing coals for 15 to 20 minutes or until tender, turning and brushing with heated marinade often. Cook skewered fruit 4 to 6 minutes until heated through, also turning and brushing with marinade.
