Ingredients:

  • 1 Tbsp. Sunkist® fresh lemon zest, finely grated
  • 1 Tbsp. Sunkist® fresh orange zest, finely grated
  • 1/3 cup flour
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. chili powder
  • 1 1/4 lbs. Tilapia filets (4 filets)
  • 3 Tbsp. butter
  • 1 garlic clove, minced
  • 1 Tbsp. fresh Sunkist® lemon juice
  • 1 Tbsp. fresh Sunkist® orange juice
  • 1 Sunkist® lemon, thinly sliced
  • 1 Sunkist® orange, thinly sliced
  • 1 1/2 Tbsp. brown sugar
  • 4 fresh parsley sprigs for garnish

Instructions: (Makes 4 servings)

  • Place lemon zest, orange zest, flour, black pepper and chili powder into a shallow bowl and combine well. Pat dry Tilapia filets and place into the seasoning, coating both sides well.
  • Melt 2 tablespoons butter in a large frying pan over medium high heat. Place Tilapia filets in pan and sauté 5 to 6 minutes turning once. Both sides should be a nice golden brown.
  • Remove filets from pan and add 1 tablespoon of butter, garlic, lemon and orange juice, cook for 30 seconds. Add the lemon and orange slices, sprinkle with brown sugar and cook over a medium heat for 2 to 3 minutes or until they start to caramelize. Add Tilapia back into the pan and coat well with pan sauce.

  • To Serve: Place Tilapia filet on plate and cover with the caramelized lemon and orange slices. Garnish with fresh parsley and serve immediately.
