The combination of limes and raspberries makes these Buttery Lime-Raspberry Bars a delicious treat.

Ingredients:

  • For crust:
  • ¾ cup flour
  • ½ cup powdered sugar
  • 6 Tbsp. butter, cut in pieces

    For Filling:

  • 2 eggs
  • ¾ cup sugar
  • ¼ cup fresh-squeezed Sunkist® lime juice
  • 2 tsp. flour
  • 2 tsp. freshly grated Sunkist® lime peel
  • 1 cup fresh raspberries
  • to taste powdered sugar (optional), for serving

Instructions: (Makes 12 servings)

  • Preheat oven to 350 degrees, and coat a 9-inch square glass pan with cooking spray.
  • Combine flour and powdered sugar in large bowl.
  • With fingers or pastry blender, cut in butter pieces and blend until mixture resembles coarse meal.
  • Press mixture into bottom of prepared pan and bake for 20 minutes, or until browned around edges.
  • Remove from oven and maintain oven temperature.
  • Whisk eggs, sugar, lime juice, flour, lime peel in bowl until smooth.
  • Gently fold in raspberries.
  • Pour mixture into crust and bake until set, about 20 minutes.
  • Cool completely before cutting into 12 bars.
  • Sift powdered sugar over top of bars to serve.
