A light and healthy dinner for hot summer evenings. Chicken and Pasta Salad is a great take along to parties!

Ingredients:

  • 2 cups cooked pasta
  • 8 oz. cooked chicken breast, cooled and cut into bite-size pieces
  • 1 cup broccoli, cut in bite-size florets and lightly steamed
  • 1 cup carrots, sliced and lightly steamed
  • 2 medium tomatoes, cut in bite-size pieces
  • ¼ cup green onion, sliced thinly
  • ¼ cup grated Parmesan cheese topping, non-fat
  • 1 Sunkist® lemon, grated peel and juice
  • 4 Tbsp. fresh basil, finely chopped
  • ¼ cup fat-free Italian salad dressing
  • ¼ tsp. black pepper, freshly ground

Instructions: (Makes 4 servings)

  • Mix together all ingredients.
  • Chill thoroughly.
