Tired of the usual nachos? Cinnamon Nachos with Yogurt Cheese and Ginger-Citrus Salsa are a sweet surprise, using oranges and grapefruit.

Ingredients:

  • 1 cup plain non-fat Weis Quality yogurt
  • 3 oz. low-fat cream cheese, softened
  • 1 Tbsp. confectioner's sugar plus more for garnish
  • 2 Sunkist® navel oranges, peeled , cut in 1/2-inch segments
  • 1 Sunkist® grapefruit, peeled, cut in 1/2-inch segments
  • 1 Tbsp. fresh ginger, grated
  • ¼ cup fresh mint leaves
  • 4 units 9-inch flour tortillas
  • 1 tsp. ground cinnamon
  • 2 Tbsp. granulated sugar
  • 3 Tbsp. Weis Quality Butter or Spread, melted

Instructions: (Makes 4 servings)

  • Preheat oven to 400 degrees.
  • Place yogurt in a fine mesh strainer and let drain of excess liquid for 10 minutes. Place drained yogurt in a bowl and blend with the cream cheese and 1 tablespoon confectioner's sugar until smooth to make yogurt cheese sauce. Refrigerate until ready to use.
  • Prepare ginger-citrus salsa by combining Sunkist orange and grapefruit pieces with ginger and mint leaves in a bowl. Refrigerate until ready to use.
  • Stack tortillas and cut into 8 wedges each. Lay wedges side-by-side on 2 cookie sheets. In a bowl combine cinnamon and 2-tablespoons granulated sugar. Brush one side of each tortilla wedge lightly with melted butter or spread. Sprinkle with cinnamon-sugar. Bake until crisp, 8-10 minutes. Remove from oven and let cool.
  • Serve nachos by arranging baked tortilla wedges on each of 4 dessert plates and drizzling yogurt cheese over them. Spoon ginger-citrus salsa over the cheese sauce and serve garnished with a sprinkle of confectioner's sugar.
