Wow, this is one satisfying meal! Citrus Baked Cornish Hens are delicious, the basting sauce consists orange, lemon, apricot preserves, Dijon mustard and onion. These are wonderful to serve at a party they look beautiful and taste even better!

Ingredients:

  • 1 Sunkist® lemon, grated peel and juice
  • 1 Sunkist® orange, grated peel
  • ¼ cup apricot preserves
  • 2 Tbsp. grated onion
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. Dijon mustard
  • 4 Rock Cornish hens (about 1-1/4 pounds each), thawed if frozen (giblets and necks removed from body cavities)

Instructions: (Makes 4 servings)

  • To make the sauce, in a small saucepan, combine all the ingredients except the hens.
  • Simmer for 5 minutes to blend the flavors and thicken sauce slightly.
  • Tie the legs of each hen together with string and turn the wing tips under the back of each hen.
  • Brush hens with sauce and arrange, breast-side-up, in a 13 x 9 x 2-inch baking dish.
  • Bake at 350o F for 60 minutes, or until hens are tender, brushing occasionally with the remaining sauce. Remove string.
  • Garnish with lemon wedges and parsley sprigs, if desired.
