is a hearty soup with an amazing flavor.
Ingredients:

dried red lentils, rinsed

medium red bell pepper, chopped

medium onion, chopped

garlic clove, minced

cups
water

1
(13 1/2 oz) can coconut milk

tsp.
yellow curry powder

Tbsp.
chopped fresh parsley and extra parsley leaves for garnish

Sunkist® lemon, juiced
Instructions: (Makes 4 servings)

In a large pot combine lentils, chopped red bell pepper, onions, garlic and water. Bring to a simmer and stir, cover and cook on medium low heat until lentils are soft, about 20 minutes.

Add coconut milk and stir, then return to a simmer. Turn off the heat and stir in curry powder, chopped parsley and the juice of one fresh Sunkist® lemon.

To Serve: Garnish each bowl with parsley leaves and serve hot.
