The yellow curry in this dish marries very well with the flavor of the coconut milk. No salt added makes this a tasty Sunkist S’alternative™ . Coconut Curry Red Lentil Soup is a hearty soup with an amazing flavor.


  • 1 cup dried red lentils, rinsed
  • 1 medium red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 4 cups water
  • 1 (13 1/2 oz) can coconut milk
  • 2 tsp. yellow curry powder
  • 2 Tbsp. chopped fresh parsley and extra parsley leaves for garnish
  • 1 Sunkist® lemon, juiced

Instructions: (Makes 4 servings)

  • In a large pot combine lentils, chopped red bell pepper, onions, garlic and water. Bring to a simmer and stir, cover and cook on medium low heat until lentils are soft, about 20 minutes.
  • Add coconut milk and stir, then return to a simmer. Turn off the heat and stir in curry powder, chopped parsley and the juice of one fresh Sunkist® lemon.

  • To Serve: Garnish each bowl with parsley leaves and serve hot.
