This recipe is a crunchy, lemony, healthy dish. Colorful Lemony Corn Salad can be used as a side or as a lovely main dish. The lemon takes the place of having to add salt which makes this a light and very tasty Sunkist S’alternative™
Ingredients:

cooked quinoa or brown rice

ears of corn, kernels sliced off of the cob

red or orange bell pepper, small dice

large vidalia onion, small dice

Roma tomatoes, seeded, small dice

cilantro, finely chopped

garlic cloves, minced

cup
raw, unsalted pumpkin seeds

black beans, drained and rinsed

Zest of 1 Sunkist® lemon

Dressing:

Juice of 2 Sunkist® lemons

tsp.
cumin

tsp.
chili pepper

tsp.
cinnamon

oregano

tsp.
dried chipotle peppers

extra virgin olive oil
Instructions: (Makes 6 servings)

Mix all salad ingredients together and set aside. Take dressing ingredients, mix well and pour over salad. Refrigerate for 4 hours to let the flavors meld before serving.
