This recipe is a crunchy, lemony, healthy dish. Colorful Lemony Corn Salad can be used as a side or as a lovely main dish. The lemon takes the place of having to add salt which makes this a light and very tasty Sunkist S’alternative™


  • 1 cup cooked quinoa or brown rice
  • 2 ears of corn, kernels sliced off of the cob
  • 1 red or orange bell pepper, small dice
  • 1 large vidalia onion, small dice
  • 4 Roma tomatoes, seeded, small dice
  • 1/4 cup cilantro, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup raw, unsalted pumpkin seeds
  • 1 can black beans, drained and rinsed
  • Zest of 1 Sunkist® lemon

  • Dressing:
  • Juice of 2 Sunkist® lemons
  • 1/2 tsp. cumin
  • 1/2 tsp. chili pepper
  • 1/4 tsp. cinnamon
  • 1 Tbsp. oregano
  • 1/8 tsp. dried chipotle peppers
  • 6 Tbsp. extra virgin olive oil

Instructions: (Makes 6 servings)

  • Mix all salad ingredients together and set aside. Take dressing ingredients, mix well and pour over salad. Refrigerate for 4 hours to let the flavors meld before serving.
