Elegance and ease in one dish. Company's Coming Fish Roll-Ups has a zesty cheese sauce which is excellent on these fish roll-ups as well as over cooked vegetable and egg dishes. Substitute any favorite cheese, caraway, Swiss, or Monterey Jack.

Ingredients:

  • 2 Tbsp. butter or margerine
  • 2 Tbsp. all-purpose flour
  • ¼ tsp. salt
  • ¼ tsp. paprika
  • 1 ¼ cups light cream, half-in-half, or milk
  • 1 cup shredded Cheddar cheese
  • ½ Sunkist® lemon, grated peel and juice
  • 10 oz. frozen chopped spinach, cooked and well drained
  • 2 Tbsp. finely chopped spinach, cooked and well drained
  • 6 fillet of sole, haddock, or flounder
  • Hot cooked rice
  • Sunkist® lemon cartwheel twists

Instructions: (Makes 6 servings)

  • To make the sauce, in a saucepan, melt the butter. Remove from heat and stir in flour, salt, and paprika.
  • Cook for a few minutes, stirring constantly. Gradually blend in cream. Cook over medium heat, stirring, until thickened. Add 1/2 cup of the cheese, lemon peel and juice; stir until cheese melts.
  • In a bowl, combine 1/3 cup of the sauce, spinach, and green onion. Divide spinach mixture equally among fillets; roll up.
  • Place, seam-side-down, in an 8-inch-square baking dish. Spoon remaining sauce over fish rolls. Bake at 350o F for 30 to 35 minutes, or until fish flakes easily with a fork.
  • Sprinkle with remaining 1/2 cup of cheese and, if desired, additional sliced green onion. Bake until cheese melts.
  • Serve the fish on the rice. Stir sauce remaining in baking dish; serve over fish and rice. Garnish with lemon cartwheel twists.
