dried pasta (spaghetti or linguine, broken in half)

red onion, diced

green bell peppers, diced

zucchini, diced
Instructions: (Makes 4 servings)

Cook pasta just until tender; drain in colander. While pasta is cooking, heat oil in non-stick skillet; sauté onionfor two minutes. Add garlic; stir over low heat for 30 seconds; add bell pepper. Cook, stirring often, for two minutes.

Add zucchini, cook for several minutes; add tomatoes. Add corn, broth, lemon peel and juice, and basil. Stir, then simmer for 2 minutes. Remove from heat, add cooked pasta and parmesan; toss to mix. Season to taste.
