Many people associate creamed spinach with a dinner of prime rib and Yorkshire pudding...popular restaurant fare. Creamed Spinach A La Lemon is a real homespun recipe flavored with bacon and fresh lemon.

Ingredients:

  • 4 slices bacon
  • 1 medium onion finely chopped
  • 1 small clove garlic, minced
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. all-purpose flour
  • 1 ¾ cups milk
  • 20 oz. frozen chopped spinach, cooked and well drained
  • 2 Tbsp. grated Parmesan cheese
  • 1 Sunkist® lemon, grated peel
  • ½ Sunkist® lemon, juiced
  • Generous dash of pepper

Instructions: (Makes 6 servings)

  • In a skillet, cook the bacon until crisp; remove, drain, and crumble. Pour off all but 1 tablespoon of the drippings.
  • In the same skillet, sauté the onion and garlic in the drippings and butter until tender. Remove from heat and stir in the flour.
  • Cook for a few minutes, stirring constantly. Gradually blend in the milk. Cook over medium heat, stirring, until thickened.
  • Add the spinach, Parmesan cheese, lemon peel, lemon juice, crumbled bacon, and pepper; heat.
