Tortilla chips make a zesty, crunchy coating for this lemony baked chicken. Crunchy Lemon Baked Chicken is crisp and easy, kids and adults alike will love this dish.


  • 2 lbs. chicken drumsticks (10 to 12) *
  • 1/2 Sunkist® lemon, grated zest and juice
  • 1/4 cup butter or margarine, melted
  • 1 cup finely crushed corn or white tortilla chips
  • 1/2 tsp. garlic salt
  • 1/2 tsp. chili powder

    * Variation: Substitute drumsticks with 2 1/2 lbs. whole chicken cut into serving size pieces or thighs.

  • Preparation: Preheat oven 400 degrees.

Instructions: (Makes 4 servings)

  • In shallow dish combine lemon peel, juice and butter. In second dish combine crushed corn chips, garlic salt and chili powder. Dip chicken in butter mixture, then coat with crushed chip mixture.
  • Arrange chicken on rack in shallow baking pan, loosely cover with foil. Bake at 400 degrees for 40 minutes, uncover and bake an additional 20 minutes, or until tender and cooked through. Garnish with fresh lemon wedges and parsley if desired.
