A simple glaze made with orange juice and zest, honey and Dijon style mustard makes this Deliciously Lite Orange Chicken a great tasting dish. Pan drippings are wonderful served with the chicken over rice.


  • 4 skinless half chicken breasts (about 1 3/4 lbs.)
  • 2 Sunkist® oranges, peeled and cut into thick cartwheels slices
  • 2 Tbsp. orange flavored liqueur
  • 1/2 tsp. curry powder
  • 1/2 Sunkist® orange, zested
  • 1 Sunkist® orange, juiced
  • 1 Tbsp. honey
  • 2 tsp. Dijon style mustard
  • 3 cups cooked rice, butter added optional

  • Preparation: Preheat over to 350 degrees.

Instructions: (Makes 4 servings)

  • Sprinkle orange cartwheel slices with orange liqueur, marinate at room temperature. Rub chicken on all sides with curry powder and arrange bone side down in 8 or 9 inch square baking pan.
  • Combine orange peel, juice, honey and mustard, pour over chicken. Cover baking pan with foil, bake at 350 degrees for 30 minutes. Uncover, bake 15 minutes longer or until chicken is tender.
  • Arrange chicken and orange cartwheel slices on serving platter, spoon off any excess fat from pan drippings and serve over chicken and rice.
  • Skillet Method: Prepare oranges and chicken as above except place chicken in 10 inch skillet. Pour orange honey mixture over chicken. Cover, cook over low heat 30 minutes or until tender.
