Most Charlottes are served cool, so this is a great warm weather dessert. Grapefruit Charlotte Russe will please your family and friends. It's delicious as well as refreshing!

Ingredients:

1 envelope unflavored gelatin
1 cup Sunkist® fresh squeezed grapefruit juice
4 eggs, separated
½ cup sugar
½ tsp. salt
¼ cup mint flavored apple jelly
2 to 3 drops green food coloring (optional)
1 Tbsp. Sunkist® freshly grated grapefruit zest
16 to 20 lady fingers, split
1 cup whipping cream, whipped

Instructions: (Makes 12 servings)

Soften gelatin in grapefruit juice. In top of double boiler, with electric mixer, beat egg yolks well with 1/4 cup sugar and salt. Gradually beat in gelatin mixture, mint jelly and food coloring. Cook over boiling water until mixture starts to thicken (about 10 minutes), stirring constantly. Add grapefruit zest.

Chill until mixture begins to thicken (about 1 hour), stirring occasionally. Meanwhile, line bottom and sides of 8 or 9 x 3 inch springform pan with lady fingers.

Beat egg whites until foamy, gradually add remaining 1/4 cup sugar, beating until soft peaks form. Fold beaten egg whites and whipped cream into grapefruit gelatin mixture. Spoon into pan lined with lady fingers. Chill 4 hours or overnight.

To Serve: Carefully remove from pan. Garnish with grapefruit sections and fresh mint leaves.
