A spice addition that you would never think to find in a dish like this! Grapefruit 'N' Chicken Salad delivers a wonderful taste and beautiful presentation also.


  • 2 Sunkist® grapefruit
  • 1/4 cup salad oil
  • 2 tsp. sugar
  • 1/4 tsp. salt
  • 1/8 tsp. pumpkin pie spice
  • 1 1/2 cups cubed cooked chicken
  • 1 small avocado, sliced
  • 2 Tbsp. sliced green onion

Instructions: (Makes 4 servings)

  • Cut grapefruit in half. With a grapefruit knife, cut around each section to loosen meat from membrane, reserve sections.
  • Squeeze juice from shells to equal 1/3 cup. With spoon, scrape grapefruit shells clean (scallop or notch edges if desired), chill.
  • Combine 1/3 cup grapefruit juice, salad oil, sugar, salt and pumpkin pie spice. Pour over reserved grapefruit sections, chicken, avocado and green onion, mix lightly and chill.

  • To Serve: Spoon chicken mixture into shells. Garnish with additional grapefruit sections and avocado slices, if desired.
