With the unexpected zip of the goat cheese paired with the great taste of the Minneola salsa this dish is rich and satisfying. Grilled Chicken Breast with Goat Cheese is one delectable main dish meal, you will be delighted with this recipe.

Ingredients:

  • 4 chicken breasts
  • 8 oz. goat cheese, cut into 4 - 2 oz. portions
  • 1/2 cup fruity olive oil
  • 6 garlic cloves, thinly sliced
  • 2 Sunkist® Minneolas, zested, peeled and segmented
  • 1 cup cherry tomatoes, halved
  • 1 cup basil, chiffonade
  • 1 tsp. chili flakes
  • 1/4 cup hot water
  • Salt and black pepper, to taste

Instructions: (Makes 4 servings)

  • Place the garlic and olive oil in a medium heavy saucepan over low heat. Bring the oil to a slow, steady bubble, then cook for 5 minutes. Stir in the chili flakes, zest and basil and continue to cook for 1 minute.
  • Using a whisk, vigorously beat in the water until a smooth sauce is formed. Add the cherry tomatoes and Minneola segments and heat over a low heat until warm. Remove from heat and keep warm, season with salt and pepper to taste.
  • Preheat grill. Season the chicken with zest, salt and pepper and evenly coat with oil. Grill over medium high heat approximately 5 minutes on both sides until cooked through.

  • To Serve: Top each chicken breast with goat cheese and warm Minneola salsa.
