  • 1 lb. firm flesh fish (halibut, grouper, salmon, seabass), about 1 inch thick; cut into 4 steaks
  • 4 Sunkist® limes, juice only
  • 1 Sunkist® lime, finely grated zest
  • 1 clove fresh garlic, minced
  • 2 Tbsp. chopped cilantro leaves, optional
  • 3 Tbsp. extra-virgin olive oil
  • 1 pinch salt and freshly ground pepper
  • 4 Sunkist® limes, juiced, for serving
  • Warm flour and corn tortillas, for serving

  • Taco condiments:
  • Key Lime Chipotle Sauce, as needed (see recipe)
  • Prepared Salsa Verde, as needed
  • Shredded red and green cabbage, as needed
  • 1 ripe avocado, peeled, seeded, cubed

Instructions: (Makes 4 servings)

  • Combine lime juice, zest, garlic, and oil in shallow glass or ceramic pan.
  • Place fish in pan and turn to coat in marinade.
  • Marinate for 20 minutes.
  • Prepare grill for high heat.
  • Grill fish until flesh flakes easily with fork, about 6-8 minutes on each side, seasoning to taste with salt and pepper.
  • Place cooked fish in serving dish and flake with fork for serving.
  • Sprinkle with additional Key lime juice, if desired.
  • Serve fish rolled in warm tortillas with taco condiments.
