Delicious and easy! Grilled Marinated Rib Eye Steaks with Grapefruit has a marinade made with grapefruit juice, soy sauce, brown sugar and ginger. This is a must try dish!


  • 2 beef rib-eye steaks (1 1/4 inch thick, about 3/4 lbs each)
  • 1 Sunkist® grapefruit, juiced (2/3 cup)
  • 1 Tbsp. lite soy sauce (50% less sodium)
  • 1 Tbsp. brown sugar
  • 1 tsp. freshly grated ginger
  • 1 Tbsp. olive oil or butter
  • 6 oz. mushrooms, thickly sliced (about 2 cups)
  • 1 large clove garlic, minced
  • Freshly grated pepper
  • 1 Tbsp. cold butter

Instructions: (Makes 4 servings)

  • Remove any excess fat from steaks, place in 1 gallon zip type plastic bag. Add grapefruit juice, soy sauce, brown sugar and ginger. Seal bag and marinate in refrigerator 1 hour or longer, turning bag occasionally.
  • In large non-stick skillet, sauté mushrooms and garlic in olive oil until lightly browned, about 4 to 5 minutes. Season to taste with ground pepper. Remove from skillet and set aside.
  • Remove steaks from marinade and pour marinade into skillet. Place steaks on hot non-stick ridged grill pan* and cook 6 to 8 minutes on each side for medium rare or until desired doneness.
  • Meanwhile, bring marinade in skillet to a boil and reduce liquid by a third, about 3 minutes. Return mushrooms to skillet, heat. Just before serving stir cold butter into mushroom mixture.

  • To Serve: Cut each steak in half or thickly slice both steaks, top with mushrooms and sauce. Serve with parsley flavored mashed potatoes if desired.

    * Steaks can also be barbecued or broiled.
