Ingredients:

  • 4 boneless pork loin chops

  • Marinade:
  • 1 Tbsp. extra virgin olive oil
  • 1 Sunkist® lime, juiced
  • 2 large garlic cloves, finely chopped
  • 1 Tbsp. ground cumin
  • 1 tsp. smoked paprika
  • 1 tsp. finely grated Sunkist® lime zest
  • Kosher salt and freshly ground black pepper

  • Salsa:
  • 2 cups red or yellow grape tomatoes, halved
  • 1 Sunkist® navel orange, segmented
  • 1 1/2 cups Sunkist® seedless green or red grapes, halved
  • 1 small red onion, thinly sliced
  • 2 Tbsp. fresh oregano, chopped
  • 1/2 cup chopped cilantro
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. Sunkist® fresh lime juice
  • Kosher salt and freshly ground black pepper

  • Preparation: Preheat grill over high heat.

Instructions: (Makes 4 servings)

  • Stir together olive oil, lime juice, garlic, cumin, smoked paprika, lime zest, 1 tsp. kosher salt and 1/2 tsp. pepper. Rub marinade evenly on pork chops and set aside while you make the salsa.
  • Stir together tomatoes, orange segments, grapes, onion, cilantro, oregano, olive oil, lime juice, 1 tsp. kosher salt and 1/2 tsp. pepper. Set aside.
  • Grill the chops, turning once, until grill marks appear and pork is just cooked through, 3 to 4 minutes per side. Transfer to a platter and top chops with salsa.
