This is a thick, rich soup with tons of flavor. Hearty Squash Soup is a great soup to warm you up in a hurry. No need to add salt to this soup, the lemon take it's place which makes this a Sunkist S’alternative™ . Try serving with crusty warm bread and butter.


  • 1 Tbsp. +1 tsp. olive oil
  • 1 butternut squash cut lengthwise and roasted
  • 1 large leek cut in half, cut into rings (washed thoroughly)
  • 1 medium jalapeno pepper seeded, deveined and finely chopped
  • 1 Sunkist® lemon, juiced (reserve rind)
  • 1/2 lemon rind, zested
  • 1 tsp. nutmeg
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • 1 1/2 cups unsalted chicken broth (or vegetable broth for vegetarian application)
  • 1 cup water
  • 2 cups butternut squash (roasted, from above)
  • Mini plum tomatoes (wedged for garnish)
  • Sunkist® lemon rind (sliced thinly for garnish)

  • Preparation: Preheat oven to 395 degrees.

Instructions: (Makes 6 servings)

  • Squash: Cut squash in half lengthwise, coat cut sides of squash with olive oil. Coat the cookie sheet using remainder of 1 tablespoon olive oil.
  • Roast cut side up for 20 minutes, turn over and pierce skin with fork. Return to oven and roast for additional 20 to 25 minutes or until tender. Let stand for 30 minutes until cool, remove seeds and fiber (discard). Scoop flesh from skin carefully leaving spines in skin. (This may be prepared ahead of time).
  • Soup: In a 2 quart sauce pan over medium heat, combine 1 teaspoon olive oil, leeks and jalapeno pepper. Sauté until leeks soften adding lemon juice half way through (5 minutes). Once leeks are softened add chicken stock, water and spices, raising heat to medium high and heat through.
  • Add squash, return to medium heat and heat through stirring frequently to prevent sticking or burning. Soup will be thick. Blend to desired consistency according to personal preference.

  • To Serve: Ladle soup into serving bowls, garnish with tomatoes and lemon rind slices and serve immediately.
