This is an amazing Sunkist S’alternative™ recipe for anyone who likes lamb. Lemon Lamb Skewers with Citrus & Green Olive Gremolata is a delicious combination of the classic gremolata which is a garnish made with garlic, lemon, parsley and green olives. No need to add salt, the lemon is all you need to enhance the flavor of the lamb.

Ingredients:

  • 1 lb. leg of lamb, cubed into 2 inch pieces
  • 1/4 cup basil flavored olive oil (plus extra for veggies)
  • 2 Tbsp. Sunkist® lemon juice, freshly squeezed
  • 2 Tbsp. Sunkist® orange juice, freshly squeezed
  • 2 Sunkist® lemons, zested
  • 1/3 cup minced white onion
  • 1 heaping tsp. lemon pepper
  • 8 baby bok choy, rinsed and dried
  • 16 small roma tomatoes, wiped clean
  • 8 metal barbecue skewers

  • Gremolata:
  • 2 tsp. freshly chopped garlic
  • 1/4 cup freshly chopped parsley
  • 1/4 cup ripe green olives, chopped
  • 1 Tbsp. olive oil
  • 2 tsp. Sunkist® lemon juice, freshly squeezed

  • Preparation: Heat barbecue grill to medium.

Instructions: (Makes 8 servings)

  • Place lamb cubes in a heavy duty plastic bag. Whisk together 1/2 cup olive oil, lemon and orange juices, onion and lemon pepper.
  • Pour mixture over lamb, seal the bag and shake to coat. Allow to sit at room temperature for 15 minutes, turning bag occasionally.
  • Remove lamb from marinade and discard excess. Rub tomato and boy choy with a small amount of olive oil. For each skewer thread one bok choy (lenghtwise) followed by one tomato, several lamb cubes, more tomato and lamb.
  • Grill for 4 to 6 minutes turning lamb occasionally. When done transfer lamb to a heated platter and sprinkle with the zest of two lemons.
  • For the gremolata, mix together chopped garlic, parsley, green olives, olive oil and lemon juice. Serve with the lamb along with warmed pieces of flatbread if desired.
