Comfort food is the only way to describe this dish! Lemony Spinach Florentine is wonderful with pasta, cheese, mushroom soup, onion and lemon, which are combined in one dish then baked. What could be easier or better on a cold evening. Serve with a side salad and you have a tasty, satisfying meal.


  • 2 packages (10 oz. each) frozen chopped spinach, well drained
  • 3 cups cooked spiral shaped pasta, elbow or macaroni
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10 3/4 oz.) condensed cream of mushroom soup
  • 3 eggs, slightly beaten
  • 1/3 cup finely chopped onion
  • 1 Sunkist® lemon, zest and juice
  • 1 tsp. celery salt
  • 1/4 tsp. pepper

  • Preparation: Preheat oven to 350 degrees.

Instructions: (Makes 6 servings)

  • In large bowl combine all ingredients blending well. Pour mixture in shallow 1 1/2 quart baking dish. Bake at 350 degrees for 30 minutes. Top with additional cheese if desired and bake until cheese melts. Garnish with lemon cartwheel slices if desired.
