This is a Sunkist S’alternative™ recipe using lemon to take the place of salt. This is one tasty dish that will be enjoyed by all!

Ingredients:

  • 1 Tbsp. olive oil
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 3 medium sized zucchini, diced
  • 1 package of original brand couscous
  • Vegetable broth
  • 1/2 tsp. freshly ground black pepper
  • 1/2 cup chopped parsley
  • 1 Sunkist® lemon, juiced

Instructions: (Makes 4 servings)

  • Heat oil in large skillet, add onion and garlic and cook until softened. Add zucchini and continue cooking until zucchini is cooked through.
  • Add couscous to skillet and cook for 3 minutes, constantly stirring. Add vegetable broth according to the amount of liquid added per package directions.
