A very quick, easy and flavorful side dish. Lemony Zucchini Couscous could also double as the base for a cold salad with the addition of other chopped veggies or as an entree by adding chicken. This is a Sunkist S’alternative™ recipe using lemon to take the place of salt. This is one tasty dish that will be enjoyed by all!
Ingredients:

olive oil

onion, diced

garlic cloves, chopped

medium sized zucchini, diced

package of original brand couscous

Vegetable broth
-
½
tsp.
freshly ground black pepper

½
cup
chopped parsley

Sunkist® lemon, juiced
Instructions: (Makes 4 servings)

Heat oil in large skillet, add onion and garlic and cook until softened. Add zucchini and continue cooking until zucchini is cooked through.

Add couscous to skillet and cook for 3 minutes, constantly stirring. Add vegetable broth according to the amount of liquid added per package directions.

Remove from heat, cover and let stand for 5 minutes. Add pepper, parsley and lemon juice to the skillet and fluff with a fork. Great served along side chicken or fish. Enjoy!
