Delicious and easy! Light 'N' Luscious Fare for Two is a great dish to serve on a hot summer's day when you want a light lunch.

Ingredients:

  • 4 slices (about 4 oz.) ham or salami
  • 4 slices (about 4oz.) Swiss or Monterey Jack cheese
  • 1 Sunkist® grapefruit, peeled, cut into 6 cartwheel slices
  • ½ honeydew or cantaloupe, cut in 6 wedges
  • 2 to 3 large strawberries, halved or sliced
  • 1 carton (8 oz.) strawberry flavored yogurt
  • 2 Tbsp. chopped nuts
  • 2 tsp. freshly grated Sunkist® grapefruit peel

Instructions: (Makes 2 servings)

  • Top each ham slice with a slice of cheese, roll up and secure with a toothpick. Arrange ham and cheese, grapefruit, melon and strawberries on two serving plates. Combine yogurt, nuts and grapefruit peel, serve over fruit garnishing with additional nuts and fresh mint if desired.
