Whole grain waffles topped with fresh oranges and citrus syrup make a great snack for after-school or after sports! The syrup keeps well in the refrigerator for a week, and it tastes just as good cold as it does warm. Using store bought toaster waffles makes this recipe easy for kids to assemble if the syrup is already made.

Ingredients:

  • 2 Sunkist® oranges juiced (~ ¾ cup)
  • 1/2 Sunkist® grapefruit juiced (~ ½ cup)
  • 2 Tbsp. maple syrup
  • Pinch of cinnamon
  • 4 whole grain toaster waffles, toasted
  • 2 Sunkist® oranges peeled and cut into quarters, and then cut into bite-size pieces
  • 4 Tbsp. slivered almonds (optional)

Instructions: (Makes 4 servings)

  • In a small 1-quart saucepan, combine the orange juice, grapefruit juice, and maple syrup. Bring to a boil, and then reduce heat to medium and cook for 18-20 minutes, until the mixture thickens and reduces by half. You should end up with about a 1/2 cup of syrup.
  • To assemble, top each waffle with orange pieces, and drizzle with 2 tablespoons syrup. Top each waffle with a tablespoon of slivered almonds to add some protein and healthy fats.
