Thin pieces of calamari cook in just minutes. Sautéed Lemon Calamari has a texture somewhat like abalone with the flavor of sole, light and "un-fishy."

Ingredients:

  • 3 Tbsp. butter or margarine
  • ¼ tsp. garlic salt
  • 1 lb. (thin pieces) calamari (giant squid)
  • ½ Sunkist® lemon, grated peel and juice
  • 1 Tbsp. chopped green onion (scallion)
  • 1 Tbsp. chopped parsley

Instructions: (Makes 4 servings)

  • In a large skillet, heat the butter with the garlic salt; sauté the calamari for 2 minutes on each side. (Calamari will remain white when fully cooked; do not brown.)

  • Add lemon peel and juice, green onion, and parsley; sauté briefly. Garnish with lemon cartwheel slices, if desired.

  • SOLE VARIATION:

  • If calamari is unavailable, substitute 1 pound sole filets. Proceed as above, sautéing the filets for 3 to 4 minutes on each side, or until lightly browned and fish flakes easily with a fork.
