Tuna should be served seared and rare in the middle as it is much more tender and juicy. The tuna seasoned with pepper and lemon, you will taste the reason no salt needs to be added. This is a healthy Sunkist S’alternative™


  • 4 ahi tuna steaks, 6 oz. each
  • 1 Sunkist® lemon, juiced
  • 1/4 cup olive oil
  • Freshly ground black pepper, to taste

  • Cantaloupe and Watermelon Relish:
  • 2 cups watermelon, small dice
  • 2 cups cantaloupe, small dice

  • Vinaigrette:
  • 1 bunch fresh mint
  • 1 Sunkist® lemon, juiced
  • 1/4 cup simple syrup

  • Simple Syrup:
  • 1/2 cup water
  • 1 cup sugar

  • Garnish:
  • 1 cucumber
  • Hot chili sauce (Sriracha)

Instructions: (Makes 4 servings)

  • Heat a sauté pan over high heat for 5 minutes until very hot. Season the tuna liberally with lemon juice and pepper. When the pan is very hot, add a drizzle of olive oil then the tuna steaks. Sear for 2 to 3 minutes on each side or until the outside is browned but the inside is very rare.
  • Simple Syrup: In a saucepan combine water and sugar over medium heat. Bring to a boil then reduce heat and simmer for 5 minutes until sugar has dissolved. Take pan off heat and cool the syrup.
  • Vinaigrette: In a blender, combine mint, lemon juice from one lemon, and 1/4 cup simple syrup. Blend until smooth. Toss the watermelon and cantaloupe with the vinaigrette.

  • To Serve: Slice the tuna on an angle. Place thinly slice cucumber lengthwise and top two slices with the cantaloupe and watermelon relish. Top with tuna, dot chili sauce alongside.
