Ingredients:
1 lb. medium shrimp, shelled, deveined, and cooked
3 Sunkist
®
orange, peeled and cut into bite-size pieces
2 medium onions, thinly sliced
¾ cup distilled white or wine vinegar
½ cup vegetable oil
1/3 cup freshly squeezed Sunkist
®
lemon juice
¼ cup ketchup
1 medium clove garlic, minced
2 Tbsp. sugar
1 Tbsp. dehydrated sweet pepper flakes
1 tsp. mustard seed
½ tsp. celery seed
½ tsp. salt
¼ tsp. pepper
¼ tsp. dried crushed red pepper
2 Tbsp. chopped parsley
Instructions: (Makes
8 servings
)
In a large bowl, combine all the ingredients except the parsley; cover. Marinate in refrigerator for 8 hours or overnight; stir occasionally. (Or marinate in a tightly sealed plastic bag, turning occasionally.) To serve, stir in parsley.
Try serving over our Pummelo Radish Salad or as an appetizer, just drain and arrange in individual, lettuce-lined cocktail glasses or small dishes.
