1 1/2 lbs. boneless, skinless chicken breast
tangerines, peeled and segmented
2 red bell peppers, cut into 1 inch pieces
1 large onion, cut into 1 inch pieces
4 Tbsp. store-bought Cajun seasoning
1 Tbsp. green onion, thinly sliced
Sunkist tangerine BBQ sauce (recipe below)
4 metal skewers
Heat barbecue to medium.
To build each kabob:
Thread one piece of chicken onto each skewer followed by one tangerine segment, one piece of bell pepper and one piece of onion. Repeat three more times for each skewer and add one tangerine segment to end the skewer. Sprinkle skewers evenly with Cajun seasoning, then grill, turning to cook on all sides, until cooked through (about 8-10 minutes total). Garnish with green onion slices and serve with tangerine BBQ sauce.
Sunkist Tangerine Barbecue Sauce:
Combine 1 cup prepared barbecue sauce with 1/4 cup freshly squeezed tangerine juice. In a bowl, mix the barbecue sauce and juice. Microwave 30 seconds to warm, and serve alongside kabobs.
