Try serving this in a hollowed out lemon, Sunkist Creamy Lemon Curd parfait is simply delicious and light after a great meal!

Ingredients:

  • 6 large egg yolks
  • ¾ cup sugar
  • ½ cup + 3 Tbsp Sunkist® lemon juice
  • 1 pinch salt
  • 8 Tbsp. (1 stick) unsalted butter, cubed
  • 3 Tbsp. finely grated Sunkist® lemon zest
  • 6 oz. cream cheese (room temperature)
  • 1 pint seasonal berries

Instructions: (Makes 6 servings)

  • In a medium sized bowl, mix together egg yolks, sugar, ½ cup lemon juice.
  • Place mixture in medium-sized stainless steel saucepan over low heat.
  • Add the cubed butter.
  • Using a rubber spatula, stir continuously until the mixture begins to thicken and slightly bubble. DO NOT BOIL!
  • Once thickened, remove the pot from the heat and pour the curd through a strainer into a bowl.
  • Stir in the lemon zest and 3 tablespoons of lemon juice; allow the mixture to come to room temperature.
  • Slowly incorporate the cream cheese.
  • Divide the curd into 6 serving glasses and refrigerate before serving.
  • Serve with seasonal berries and sugar cookies.
