Brown rice is a healthy, nutty tasting whole grain that is wonderful in the Sunkist Gold Nugget Mandarin and Brown Rice Sushi Hand Roll. The pickled ginger and wasabi add a spicy flavor while the gold nugget mandarin is sweet and delicious, combined with the avocado and bean sprouts this is a dish that will sure to be requested over and over.


  • 3 sheets nori seaweed, halved
  • 1 1/2 cups short grain brown rice, cooked
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. pickled ginger, chopped
  • 1/2 tsp. wasabi
  • 2 Sunkist® gold nugget mandarins, peeled and sectioned
  • 1 avocado, sliced
  • 1/2 cup alfalfa sprouts
  • Sesame seeds, toasted

Instructions: (Makes 6 servings)

  • In a small bowl, mix together the mayonnaise, pickled ginger and wasabi.
  • Place a sheet of nori on a clean work surface. Take a spoonful of rice and place it on the left hand side of the nori. Flatten out the rice to evenly cover the left side.
  • Use a spoon to wipe some of the mayonnaise along the rice. Place two slices of avocado on top of the rice at a 45° angle to the top left corner of the nori.
  • Top the avocado with two sections of gold nugget mandarin, a pinch of alfalfa sprouts and a sprinkle of sesame seeds.
  • Fold the bottom left corner over the filling to form a pointed top left corner. Use your fingers to roll the nori into a cone shape. Grasp the nori in order to seal the roll and serve.
