  • 4 Tilapia filets
  • 2 Sunkist® lemons
  • 1/2 cup grated parmesan cheese
  • 1/2 cup bread crumbs
  • 1/4 cup chopped parsley
  • 1 egg white
  • 3 garlic cloves, minced
  • 1 Tbsp. Dijon mustard
  • 6 Tbsp. extra virgin olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 8 basil leaves

  • Preparation: Preheat oven to 400 degrees.

Instructions: (Makes 4 servings)

  • Using a microplane or fine grater, remove the zest from the lemons and place in a medium sized mixing bowl. Add the parmesan, bread crumbs and parsley to the bowl and mix well.
  • In a smaller bowl, whisk together the egg white, garlic, Dijon mustard, 2 tablespoons olive oil, salt and pepper. Add the mixture to the parmesan and bread crumbs and blend well.
  • Slice the ends off the lemons and discard. Thinly slice the lemons into approximately 8 slices each and remove all seeds.
  • Cover a baking sheet with aluminum foil. Coat with the remaining 4 tablespoons of olive oil and arrange the lemon slices evenly so that they will fit nicely under each filet. Top the lemon with the basil leaves.
  • Divide the parmesan bread crumb mixture evenly among the four filets. Using your hand, apply pressure to adhere the mixture onto the filets. Place the filets over the basil and lemons, bake in the oven for approximately 15 minutes, or until fish is cooked through and crust is lightly browned.

  • To Serve: Top each filet with the roasted lemon slices and basil leaves and serve.
