You will enjoy the taste of Sunkist Lemon Cream Cheese with Smoked Salmon and Mint. The use of mint is a delightful and unexpected surprise.

Ingredients:

  • 1 Tbsp. Sunkist lemon juice
  • 1/2 Tbsp. Sunkist lemon zest
  • 8 oz. cream cheese (room temp)
  • 1 tsp. turmeric
  • 4 oz. smoked salmon, roughly chopped
  • 24 mint leaves, whole
  • 12 water crackers

Instructions: (Makes 12 servings)

  • In a medium sized bowl, add the cream cheese, lemon zest, lemon juice and turmeric. Mix until consistent; then place in a quart size resealable plastic bag.
  • Cut ¼ inch off the corner of the bag and squeeze enough mixture out of the bag onto each of the crackers to cover them.
  • Top each cracker with the salmon and garnish them with mint leaves.
